SEVENTY ONE GIN rests in a combination of select virgin Spanish oak, ex-Pedro Ximenes sherry and ex-Cognac casks. Each cask has been selected to bring its own characteristic to the final spirit; medium-toasted virgin European oak brings warm notes of vanillin, almond, and wood smoke. Ex-Pedro Ximenes sherry casks, a mix of European & American oak, brings sweetly aromatic spice notes, with raison and dark chocolate accents. Finally ex-Cognac casks add deep and rich characteristics with a hint of rancio, accented by notes of pear, acacia honey and vanilla. After precisely resting process, the spirit is imbued with a golden glow. Each cask is then skilfully blended, imparting an unparalleled richness and an added dimension of flavour and complexity. Greater than the sum of its parts.
